- 3–4 boneless, skinless chicken breasts (1 lb)
- 2 cloves fresh garlic, minced
- 8 oz fettuccine or spaghetti
- 8 oz fresh mushrooms, sliced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 1 cup frozen peas
- 1 tsp dried thyme
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- In a large skillet over medium heat, melt butter and sauté diced chicken seasoned with salt and pepper until golden brown (about 6-8 minutes). Remove from skillet.
- In the same skillet, add sliced mushrooms and sauté until tender (approximately 5 minutes).

- Cook pasta al dente according to package instructions; drain and combine with the creamy sauce and frozen peas.
