  • 1 lb lean ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 8 corn tortillas
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream
  • 1 cup salsa (mild or spicy)
  • 1 can black beans, drained and rinsed (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray an oven-safe baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef for about 5-7 minutes until fully cooked. Drain excess fat if needed.
  3. Stir in taco seasoning and 1/4 cup water. Simmer for 3-5 minutes until fragrant.
  4. Layer half of the crispy tortillas in the baking dish, then add half of the beef mixture, followed by salsa and cheese.
  5. Repeat layers with remaining tortillas, beef, salsa, and top with extra cheese.
  6. Bake for 25-30 minutes until bubbly and golden brown.
  7. Let cool slightly before garnishing with sour cream and green onions if desired.
