  • Beef Chuck Roast
  • Dried Guajillo Chiles
  • Dried Ancho Chiles
  • Onion
  • Garlic Cloves
  • Cumin Powder
  • Oregano
  • Beef Broth
  • Lime Juice
  • Corn Tortillas
  • Cilantro and Onion (for garnish)

Instructions

  1. Remove stems and seeds from guajillo and ancho chiles; soak them in hot water for 15 minutes.
  2. In a blender, combine soaked chiles, onion, garlic, cumin, oregano, salt, and enough soaking liquid to form a smooth paste.
  3. In a large pot over medium-high heat, brown the beef chuck roast on all sides.
  4. Add the blended mixture and beef broth; bring to a boil, then reduce heat to low and simmer for about two hours or until the meat is tender.
  5. Shred the beef using two forks and return it to the pot with some broth.
