  • 4 dried guajillo chiles
  • 2 dried pasilla chiles
  • 1 large onion
  • 5 garlic cloves
  • 2 cups low-sodium beef broth
  • Fresh cilantro (for serving)
  • Lime wedges (for serving)
  • Corn tortillas

Instructions

  1. 1. Prepare the Chiles: Remove stems and seeds from guajillo and pasilla chiles, then lightly toast them in a skillet over medium heat for about two minutes.
  2. 2. Blend the Sauce: In a blender, combine toasted chiles, sliced onion, crushed garlic cloves, beef broth, cumin, oregano, salt, and pepper until smooth.
  3. 3. Brown the Meat: Heat oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until browned (about four minutes per side).
