Ingredients
- 3–4 lbs beef chuck roast
- 4 dried guajillo chiles
- 2 dried pasilla chiles
- 1 large onion
- 5 garlic cloves
- 2 cups low-sodium beef broth
- Fresh cilantro (for serving)
- Lime wedges (for serving)
- Corn tortillas
Instructions
- 1. Prepare the Chiles: Remove stems and seeds from guajillo and pasilla chiles, then lightly toast them in a skillet over medium heat for about two minutes.
- 2. Blend the Sauce: In a blender, combine toasted chiles, sliced onion, crushed garlic cloves, beef broth, cumin, oregano, salt, and pepper until smooth.
- 3. Brown the Meat: Heat oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until browned (about four minutes per side).
- 4. Cook Low and Slow: Pour the blended sauce over the seared meat. Cover tightly and reduce heat to low; let it simmer for about three hours until tender.
- 5. Shred the Beef: Remove meat from pot and shred using two forks. Reserve some cooking liquid as consomé.
- 6. Assemble Your Tacos: Warm corn tortillas briefly on a hot skillet. Fill each with shredded beef and top with cilantro and diced onions. Drizzle with sauce before serving.
