- 2 large eggs
- 1/2 cup all-purpose flour

- Salt and pepper to taste

- Oil for frying
Instructions
- If using raw potatoes, peel, chop, and boil until tender. Drain and mash until smooth.
- Mix in warm mashed potatoes: add cheese, garlic powder, salt, pepper, and chives.
- Allow to cool slightly, then incorporate eggs one at a time. Fold in enough flour to bind the mixture.
- Shape into golf ball-sized puffs using your hands or spoons.
- Heat oil in a pan over medium-high heat. Fry puffs in batches until golden brown.
- Drain on paper towels and serve hot.
