Ingredients

  • 2 cups mashed potatoes (fresh or leftover)
  • 1 cup shredded cheese (sharp cheddar recommended)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Chives (optional)
  • Oil for frying

Instructions

  1. If using raw potatoes, peel, chop, and boil until tender. Drain and mash until smooth.
  2. Mix in warm mashed potatoes: add cheese, garlic powder, salt, pepper, and chives.
  3. Allow to cool slightly, then incorporate eggs one at a time. Fold in enough flour to bind the mixture.
  4. Shape into golf ball-sized puffs using your hands or spoons.
  5. Heat oil in a pan over medium-high heat. Fry puffs in batches until golden brown.
  6. Drain on paper towels and serve hot.
