  • 1 cup bell peppers, diced (mixed colors)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large casserole dish.
  2. In a skillet over medium heat, brown the ground beef until no pink remains. Add diced onion and bell peppers; sauté until softened.
  3. Stir in minced garlic for the last minute of cooking, then drain excess fat.
  4. Add canned tomatoes with juices and season with salt, pepper, paprika, and Italian herbs; mix well.
  5. Layer half of the beef mixture in the casserole dish followed by half of the cheese. Repeat layers until all ingredients are used.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake uncovered for an additional 10-15 minutes until bubbly and golden.
