- 1 cup elbow macaroni
- 3 cups low-sodium beef broth
- 2 tsp sweet or smoked paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Set the Instant Pot to sauté mode. Heat olive oil and add chopped onions and minced garlic; sauté until translucent (3-4 minutes).
- Add seasoned beef cubes; brown on all sides (5-7 minutes).
- Stir in bell peppers, paprika, salt, and pepper; cook until fragrant.
- Pour in diced tomatoes and beef broth; scrape browned bits from the pot.
- Add elbow macaroni ensuring it's submerged in liquid. Close the lid and cook on high pressure for 8 minutes.
- Release pressure quickly, stir well, and serve hot.
