- 4 cups mashed potatoes (prepared fresh or store-bought)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 3 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
- 4 green onions, chopped
- 4 tbsp butter
Instructions
- Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick spray.
- In a skillet over medium heat, cook diced chicken until golden brown and no longer pink, about 6-8 minutes.
- Boil peeled potatoes in salted water until tender. Drain and mash with butter, sour cream, salt, and pepper until creamy.
