  • 1 cup arborio rice
  • 2 cups vegetable broth (warm)
  • 1 cup mixed mushrooms (cremini and button), sliced
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh sage leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/4 cup white wine (optional)
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, melt butter and olive oil. Add onion and garlic, sautéing until translucent.
  2. Add sliced mushrooms and fresh sage; cook until mushrooms soften (about 5 minutes).
  3. Stir in arborio rice until coated in oil. If using wine, add it now and let absorb.
  4. Gradually add warm vegetable broth one ladle at a time, stirring frequently until each addition is absorbed.
  5. Once all broth is absorbed and rice is al dente (about 20 minutes), remove from heat and mix in Parmesan cheese. Season with salt and pepper.
