  • 1 cup Arborio rice
  • 1 lb large shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • 1 cup frozen peas
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent (3-4 minutes).
  2. Stir in minced garlic and Arborio rice, cooking until the rice edges turn slightly translucent (1-2 minutes).
  3. Gradually add chicken broth one ladle at a time, stirring continuously until absorbed (20-25 minutes).
  4. Add shrimp and frozen peas when most of the broth is absorbed, cooking until shrimp are pink (about 5 minutes).
  5. Remove from heat, stir in Parmesan cheese and butter until melted. Season to taste.
  6. Serve hot, garnished with additional Parmesan or fresh herbs.
