- 1 lb large shrimp, peeled and deveined
- 4 cups low-sodium chicken broth

- 2 tbsp unsalted butter
- 2 tbsp extra virgin olive oil

Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent (3-4 minutes).
- Stir in minced garlic and Arborio rice, cooking until the rice edges turn slightly translucent (1-2 minutes).
- Gradually add chicken broth one ladle at a time, stirring continuously until absorbed (20-25 minutes).
- Add shrimp and frozen peas when most of the broth is absorbed, cooking until shrimp are pink (about 5 minutes).
- Remove from heat, stir in Parmesan cheese and butter until melted. Season to taste.
