Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 ripe avocados
  • 4 tortillas (whole grain or flour)
  • 2 cups fresh spinach or lettuce
  • 1 large tomato (sliced)
  • Cheese (optional)
  • salt
  • pepper
  • paprika

Instructions

  1. Season chicken breasts with salt and paprika. Heat olive oil in a skillet over medium heat.
  2. Cook the chicken for 6-7 minutes per side until golden brown and juices run clear. Let cool and slice into thin strips.
  3. While the chicken cooks, chop spinach or lettuce and slice tomatoes.
  4. On a tortilla, layer spinach, sliced chicken, avocado slices, and tomatoes.
  5. Roll tightly from the bottom up, folding in the sides to secure fillings. Cut in half diagonally to serve.
