  • 8 oz chorizo (spicy or mild)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 cups spinach or kale, chopped
  • Juice of 1 lemon
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent, then add minced garlic for an additional minute.
  2. Crumble chorizo into the pot and cook until browned.
  3. Stir in tomato paste, cumin, and smoked paprika; cook for another couple of minutes.
  4. Add chickpeas and vegetable broth; stir to combine.
  5. Let simmer on low heat for about 20 minutes.
  6. Just before serving, stir in chopped greens and finish with lemon juice.
