Instructions
- Chop vegetables into even-sized chunks for uniform cooking.
- In a large pot, heat olive oil over medium-high heat. Sear seasoned lamb shoulder until browned on all sides; remove and set aside.
- Add chopped onions and minced garlic to the pot, sautéing until translucent.
- Return the lamb to the pot along with carrots, potatoes, tomato paste, herbs, salt, pepper, and beef broth. Stir gently to combine.
- Bring to a gentle boil, then reduce heat to low and cover. Simmer for approximately 2 hours until the lamb is tender.
