Ingredients

  • Lamb shoulder (bone-in preferred)
  • Carrots
  • Yukon Gold potatoes
  • Yellow onions
  • Garlic
  • Beef broth
  • Tomato paste
  • Fresh thyme and rosemary
  • Olive oil
  • Salt and pepper

Instructions

  1. Chop vegetables into even-sized chunks for uniform cooking.
  2. In a large pot, heat olive oil over medium-high heat. Sear seasoned lamb shoulder until browned on all sides; remove and set aside.
  3. Add chopped onions and minced garlic to the pot, sautéing until translucent.
  4. Return the lamb to the pot along with carrots, potatoes, tomato paste, herbs, salt, pepper, and beef broth. Stir gently to combine.
  5. Bring to a gentle boil, then reduce heat to low and cover. Simmer for approximately 2 hours until the lamb is tender.
  6. Taste and adjust seasoning before serving.
