  • 1 tsp fresh ginger (grated)

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for about 6-7 minutes per side until golden brown and cooked through.
  2. While chicken cooks, chop cucumbers, shred carrots, and slice red bell peppers.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), and grated ginger.
  4. Once chicken is cooked, let it cool slightly before slicing into strips.
