Ingredients

  • 8 oz sirloin or ribeye steak
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 ripe avocado, diced
  • 4 slices thick-cut bacon, cooked and crumbled
  • ¼ cup blue cheese, crumbled
  • ½ red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Preheat your grill to medium-high heat. Season the steak with salt and pepper. Grill for 4-5 minutes per side for medium rare. Let it rest before slicing.
  2. While the steak rests, wash and chop the mixed greens, tomatoes, and cucumber.
  3. Cook the bacon in a skillet until crispy; drain on paper towels.
  4. Slice the avocado just before serving to maintain freshness.
  5. In a large bowl, layer the mixed greens, tomatoes, cucumber, red onion, bacon bits, avocado slices, and blue cheese.
  6. Drizzle with olive oil and balsamic vinegar before serving and toss gently.
