- 1 cup rolled oats
- 1/2 cup vanilla protein powder
- 4 oz light cream cheese
- 1 cup fresh strawberries, hulled and chopped
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 2 tbsp coconut flour
Instructions
- In a large bowl, mix rolled oats, protein powder, cream cheese, strawberries, honey or maple syrup, vanilla extract, and coconut flour until well combined.
- Cover the mixture and refrigerate for 30 minutes to firm up.
- Once chilled, scoop tablespoon-sized portions and roll into balls.
- Place on a parchment-lined baking sheet. Optionally roll some in crushed graham crackers or shredded coconut.
- Store in an airtight container in the fridge for up to one week.
