  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup Caesar dressing
  • 4 cups fresh romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 4 large flour tortillas
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Juice of 1 lemon

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper.
  2. Grill or pan-sear chicken for 6-7 minutes on each side until golden brown and cooked through. Remove from heat and let rest for 5 minutes before slicing.
  3. In a bowl, toss chopped romaine with Caesar dressing until well-coated.
  4. Slice rested chicken into strips.
  5. On each tortilla, layer dressed romaine, sliced chicken, and grated Parmesan cheese.
  6. Roll tightly, tuck in sides to prevent spillage, and cut each wrap in half diagonally.
