- 6 large hard-boiled eggs
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp paprika
- Salt and pepper to taste
- 6 pitted black olives (for eyes)
- 1 medium carrot (cut into small triangles for beaks and feet)
- 2 tbsp finely chopped chives or green onions (for garnish)
Instructions
- Boil the eggs by placing them in a pot covered with water. Bring to a boil, then cover and remove from heat, letting them sit for 10-12 minutes. Transfer to ice water to cool.
- Peel the cooled eggs under running water and slice them in half lengthwise. Scoop out the yolks into a bowl.
- Mash the yolks with mayonnaise, Dijon mustard, paprika, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Decorate each chick using sliced olives for eyes and carrot triangles for beaks and feet. Garnish with chives if desired.
- Serve chilled on a platter.
