  • 2 cloves fresh garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 tsp onion powder
  • 1 cup bell peppers, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook chicken until golden brown. Shred once cooled.
  3. Sauté chopped bell peppers and minced garlic in the same skillet for about 3 minutes.
  4. In a bowl, mix shredded chicken, diced tomatoes, cream of chicken soup, sautéed veggies, and onion powder until well combined.
  5. Layer half of the tortilla chips in the baking dish, followed by half of the chicken mixture and half of the cheese. Repeat layers.
  6. Bake for about 30 minutes until bubbly and golden brown on top. Let cool slightly before serving.
