  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 large ripe mango, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/4 cup red onion, finely diced
  • 1 jalapeño pepper, finely chopped (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the mango, dice the avocado, and finely chop the cilantro and jalapeño.
  2. Heat olive oil in a skillet over medium heat. Season shrimp with salt and pepper. Cook for about 3-4 minutes per side until pink and opaque.
  3. In a bowl, combine diced mango, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Mix gently.
  4. Layer sliced avocado in each bowl followed by sautéed shrimp and top with mango salsa.
  5. Optionally serve with extra lime wedges on the side.
