  • 1 cup sun-dried tomatoes (oil-packed)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 2 tsp Italian seasoning
  • 1 cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden brown; remove from skillet.
  2. In the same skillet, sauté minced garlic until fragrant (about 30 seconds). Scrape browned bits from the bottom.
  3. Add heavy cream, chicken broth, lemon juice, and Italian seasoning. Stir to combine and simmer until slightly thickened.
  4. Incorporate sun-dried tomatoes and spinach; cook until wilted (about 2 minutes). Return chicken to the skillet and coat with sauce.
  5. Sprinkle freshly grated Parmesan cheese over the top before serving.
