Instructions
- Preheat oven to 350°F (175°C). In a large bowl, cream together softened butter and sugars until light and fluffy. Beat in eggs one at a time.
- Gradually mix in flour until just combined; do not overmix.
- In another bowl, beat cream cheese with sugar and vanilla until smooth to create the filling.
- Scoop cookie dough, flatten in your palm, add a dollop of cheesecake filling, and wrap the dough around it completely.
- Place on a parchment-lined baking sheet and bake for 12-15 minutes until edges are golden and centers remain soft.
- Cool on wire racks and decorate with sprinkles before serving.
