Description

Easter Cheesecake Cookies are a delightful combination of creamy cheesecake filling and soft, chewy cookie dough, decorated with colorful sprinkles for a festive spring treat.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract
  • Rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream together softened butter and sugars until light and fluffy. Beat in eggs one at a time.
  2. Gradually mix in flour until just combined; do not overmix.
  3. In another bowl, beat cream cheese with sugar and vanilla until smooth to create the filling.
  4. Scoop cookie dough, flatten in your palm, add a dollop of cheesecake filling, and wrap the dough around it completely.
  5. Place on a parchment-lined baking sheet and bake for 12-15 minutes until edges are golden and centers remain soft.
  6. Cool on wire racks and decorate with sprinkles before serving.
