Instructions
- In a large bowl, whisk together flour, baking powder, brown sugar, cinnamon, and nutmeg.
- In another bowl, combine eggnog and egg until smooth.
- Pour the wet mixture into the dry ingredients and fold gently until just combined; do not overmix.
- Heat a nonstick skillet over medium heat and melt butter until bubbly.
- Pour about 1/4 cup of batter for each pancake; cook until bubbles form on the surface (about 2-3 minutes). Flip and cook until golden brown.
- Serve warm topped with maple syrup or whipped cream.
