- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 3 medium sweet potatoes (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 tbsp olive oil
- 1 cup BBQ sauce
- Salt and pepper to taste
- ¼ cup green onions, chopped
- ¼ cup cilantro or parsley, chopped
- ½ cup sour cream or Greek yogurt
Instructions
- Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
- In a bowl, mix salt, pepper, and minced garlic. Coat each chicken breast with the mixture and place on one baking sheet.
- Dice the sweet potatoes into even cubes, toss with olive oil, salt, and pepper, then spread on the second baking sheet.
- Roast the chicken for 25-30 minutes until cooked through and the sweet potatoes for about 20-25 minutes until tender.
- Brush BBQ sauce over the chicken and return to the oven for an additional 5 minutes.
- Assemble bowls by layering sweet potatoes at the bottom, followed by chicken slices/shreds on top. Garnish with green onions, cilantro or parsley, and a dollop of sour cream or Greek yogurt.
