  • 1 lb flank steak
  • 1 cup whole wheat couscous
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup tzatziki sauce
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp olive oil (divided)
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix 2 tbsp olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the flank steak and marinate for at least 15 minutes.
  2. Boil water per package instructions. Stir in couscous with a pinch of salt and a splash of olive oil. Cover and let sit for about 5 minutes until fluffy.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated steak for about 4-5 minutes on each side until desired doneness. Let it rest before slicing.
  4. While the steak rests, chop cucumbers, halve cherry tomatoes, and slice red onion.
  5. Fluff couscous with a fork and layer it into bowls. Top with sliced steak and arrange fresh veggies artfully.
  6. Drizzle tzatziki sauce generously over the bowls and sprinkle with fresh parsley.
