Description

Cowboy Stew is a comforting one-pot dish that combines tender beef, vibrant vegetables, and rich flavors, perfect for cozy evenings or gatherings.


Ingredients

  • 1 lb lean ground beef
  • 2 medium yellow potatoes, diced
  • 2 fresh carrots, chopped
  • 1 medium onion, chopped
  • 14.5 oz canned diced tomatoes (with juice)
  • 4 cups low-sodium beef broth
  • 1 cup fresh or frozen green beans
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Break it apart as it cooks.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent (about 5 minutes).
  3. Stir in the diced potatoes, chopped carrots, canned tomatoes (with juice), beef broth, smoked paprika, garlic powder, salt, and pepper.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes until the vegetables are tender.
  5. In the last 10 minutes of cooking, add green beans and cook until crisp-tender.
  6. Serve hot with crusty bread or cornbread.
