- 1 lb lean ground beef
- 2 medium yellow potatoes, diced
- 2 fresh carrots, chopped
- 1 medium onion, chopped
- 14.5 oz canned diced tomatoes (with juice)
- 4 cups low-sodium beef broth
- 1 cup fresh or frozen green beans
- 2 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, brown the ground beef until fully cooked. Break it apart as it cooks.
- Add the chopped onion and minced garlic; sauté until the onion is translucent (about 5 minutes).
- Stir in the diced potatoes, chopped carrots, canned tomatoes (with juice), beef broth, smoked paprika, garlic powder, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes until the vegetables are tender.
- In the last 10 minutes of cooking, add green beans and cook until crisp-tender.
- Serve hot with crusty bread or cornbread.
