Ingredients

  • 2 medium zucchinis (about 500g), sliced into 1/4-inch rounds
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1/2 cup seasoned breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with olive oil.
  3. In a large bowl, toss zucchini slices with olive oil, garlic powder, salt, and pepper until evenly coated.
  4. Layer half of the zucchini in the prepared dish followed by half of the cheddar cheese. Repeat the layers.
  5. Top with seasoned breadcrumbs and Parmesan cheese.
  6. Bake for 30-35 minutes until cheese is melted and bubbly and breadcrumbs are golden brown.
