- 1/2 cup granulated sugar
- 1 tsp baking powder

- 2 large eggs

Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan with grease or liners.
- In a large bowl, mash the ripe bananas until smooth.
- Mix in the melted butter, eggs, and vanilla extract until well combined.
- In another bowl, whisk together flour, sugar, baking powder, and salt. Gradually fold this into the wet ingredients until just combined.
- If desired, gently fold in walnuts or chocolate chips.
- Fill each muffin cup about three-quarters full and bake for 12-15 minutes until golden brown.
