  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup BBQ sauce (store-bought or homemade)
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 2 tsp olive oil
  • 1 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • Salt & pepper to taste

Instructions

  1. Preheat a grill or skillet over medium heat. Season chicken with salt and pepper and grill for 6-7 minutes per side until fully cooked. Let cool before shredding.
  2. In the same skillet, heat olive oil over medium heat. Sauté bell peppers and onions for 5-7 minutes until soft.
  3. In a bowl, mix shredded chicken with BBQ sauce until well-coated. Place half the mixture on one side of each tortilla and top with cheese.
  4. Fold tortillas in half and cook in the skillet for 3-4 minutes per side until golden brown and crispy.
  5. Slice into wedges and serve with extra BBQ sauce or sour cream.
