- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup BBQ sauce (store-bought or homemade)
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 2 tsp olive oil
- 1 cup bell peppers, sliced
- 1/2 cup onions, sliced
- Salt & pepper to taste
Instructions
- Preheat a grill or skillet over medium heat. Season chicken with salt and pepper and grill for 6-7 minutes per side until fully cooked. Let cool before shredding.
- In the same skillet, heat olive oil over medium heat. Sauté bell peppers and onions for 5-7 minutes until soft.
- In a bowl, mix shredded chicken with BBQ sauce until well-coated. Place half the mixture on one side of each tortilla and top with cheese.
- Fold tortillas in half and cook in the skillet for 3-4 minutes per side until golden brown and crispy.
- Slice into wedges and serve with extra BBQ sauce or sour cream.
