- 1 large onion, sliced
- 3–4 cloves fresh garlic, crushed
- 1 cup bell peppers, assorted colors, sliced
- 1 cup carrots, thinly sliced
- 2 tsp fresh thyme (or 1 tsp dried)
- 3 tbsp low-sodium soy sauce
- 2 cups low-sodium chicken broth
- 1 tbsp tomato paste
- ¼ tsp cayenne pepper (optional)
- ½ tsp pimento (allspice) berries or ground
- 2 tbsp vegetable oil
Instructions
- Rinse the chicken under cold water and pat dry. Season generously with salt, pepper, and half the thyme.
- In a large pot over medium heat, add vegetable oil. Sauté onions, garlic, bell peppers, and carrots until fragrant and onions are translucent.
- Increase heat to medium-high and brown the seasoned chicken pieces on all sides for about 5-7 minutes.
- Stir in soy sauce, tomato paste, remaining thyme, cayenne pepper (if using), pimento berries (if using), and chicken broth. Mix well.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 30-40 minutes or until the chicken is cooked through and tender.
- Taste the sauce for seasoning adjustments before serving hot over rice or with crusty bread.
