- 4 slices sharp cheddar cheese
- 1 medium sweet onion, sliced
- 4 slices rye or sourdough bread
- 2 tbsp unsalted butter
- 3 tbsp ketchup
- 3 tbsp mayonnaise
- 1 tsp hot sauce
Instructions
- Prepare the special sauce by mixing ketchup, mayonnaise, and hot sauce in a small bowl. Set aside.
- In a skillet over medium heat, sauté sliced onions in oil until translucent (5-7 minutes).
- Shape ground beef into four burger patties slightly larger than bread slices; season with salt and pepper.
- In the same skillet, melt butter over medium heat. Cook patties for 4-5 minutes per side until browned and cooked through.
- Assemble melts by placing one slice of bread in the skillet, topping with cheese, a patty, sautéed onions, special sauce, then another slice of bread.
- Flip carefully when golden brown on one side and cook for another 3-4 minutes until both sides are crispy and cheese is melted.
