Ingredients
- 12 jumbo pasta shells
- 1 lb lean ground beef
- 1 packet taco seasoning (about 1 oz)
- 2 cups shredded cheddar cheese, divided
- 1/2 cup sour cream
- 1 cup salsa (mild or spicy)
- 2 green onions, chopped
Instructions
- Boil water in a large pot. Add salt and cook jumbo pasta shells according to package instructions until al dente (9-11 minutes). Drain and set aside.
- In a skillet over medium heat, brown ground beef until fully cooked. Drain excess grease and stir in taco seasoning with 1/2 cup water; simmer for 5 minutes.
- Remove from heat and mix in sour cream and half of the shredded cheese.
- Preheat your oven to 350°F (175°C). Stuff each pasta shell with the cheesy beef mixture and place them in a baking dish.
- Pour salsa over the shells and sprinkle remaining cheese on top.
- Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until cheese is bubbly.
