  • 1 cup freshly grated Parmesan cheese
  • 1 cup bell peppers (red or yellow), chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lb protein of choice (chicken, shrimp, or sausage)

Instructions

  1. Cook pasta in salted boiling water until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add your chosen protein and sauté until golden brown (5-7 minutes).
  3. Add onion and bell peppers to the skillet; cook until softened (3-4 minutes). Stir in garlic and cook for an additional minute.
  4. Reduce heat to low; pour in heavy cream and stir continuously. Mix in Cajun seasoning and Parmesan until smooth (2-3 minutes).
  5. Fold in cooked pasta until well-coated; let simmer for 1 minute.
  6. Serve hot, topped with extra Parmesan and freshly cracked black pepper.
