Ingredients

  • 3 large starchy potatoes (such as Russets)
  • 1 medium yellow onion
  • 2 large eggs
  • ½ cup all-purpose flour (or gluten-free flour)
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil for frying (about ½ inch in skillet)

Instructions

  1. Peel and grate the potatoes using a box grater or food processor until finely shredded.
  2. Squeeze out excess moisture from the grated potatoes using a clean kitchen towel.
  3. In a mixing bowl, combine grated potatoes, chopped onion, beaten eggs, flour, salt, and pepper. Mix well until combined.
  4. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  5. Drop portions of the batter into the hot oil, flatten slightly, and fry for about 3-4 minutes per side until golden brown and crispy.
  6. Transfer cooked pancakes to paper towels to drain excess oil and serve warm with sour cream or applesauce.
