- 6 strips thick-cut bacon

Instructions
- Boil the Yukon Gold potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool slightly before cutting into bite-sized pieces.
- In a skillet over medium heat, cook diced bacon until crispy. Remove the bacon but reserve about 2 tablespoons of grease in the pan. Sauté the finely chopped red onion in the grease until softened.
- Whisk together apple cider vinegar, Dijon mustard, salt, and pepper in a bowl until smooth.
- In a large bowl, combine warm potato chunks with sautéed onions and crispy bacon. Pour the dressing over and gently toss to coat without mashing.
- Add chopped parsley and give it one final toss before serving.
