  • 2 pounds Yukon Gold potatoes
  • 6 strips thick-cut bacon
  • 1 medium red onion, finely chopped
  • 1/2 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Boil the Yukon Gold potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool slightly before cutting into bite-sized pieces.
  2. In a skillet over medium heat, cook diced bacon until crispy. Remove the bacon but reserve about 2 tablespoons of grease in the pan. Sauté the finely chopped red onion in the grease until softened.
  3. Whisk together apple cider vinegar, Dijon mustard, salt, and pepper in a bowl until smooth.
  4. In a large bowl, combine warm potato chunks with sautéed onions and crispy bacon. Pour the dressing over and gently toss to coat without mashing.
  5. Add chopped parsley and give it one final toss before serving.
