  • 4 ears fresh corn on the cob
  • 1/2 cup full-fat mayonnaise
  • 1 tsp chili powder
  • Juice of 2 limes
  • 1/2 cup crumbled queso fresco or cotija cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Shuck the corn and remove silk strands. Rinse under cold water.
  2. Preheat your grill over medium-high heat. Grill corn for 10-15 minutes, turning occasionally until tender and slightly charred.
