- 1 lb lean ground beef
- 4 oz pepperoni (thick slices)
- 2 cups shredded mozzarella cheese
- 1 cup low-carb pizza sauce
- 1 cup diced bell peppers (mixed colors)
- 1 cup sliced mushrooms (fresh)
- 2 cups zucchini noodles
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
- Add diced bell peppers and sliced mushrooms; sauté until softened.
- Layer half of the zucchini noodles in the baking dish, followed by half of the meat mixture and half of the pizza sauce. Sprinkle with half of the cheese. Repeat the layers.
- Cover with foil and bake for 25 minutes. Remove foil and bake another 15 minutes until bubbly and golden brown.
- Let cool for 10 minutes before serving.
