  • 2 medium eggplants, sliced into ½-inch rounds
  • 2 tbsp taco seasoning
  • 1 large sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup tomato sauce (canned)
  • 3 large eggs
  • 1 cup sour cream

Instructions
