  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 4 tbsp unsalted butter
  • 2 tbsp granulated sugar
  • 1 cup mixed fresh or frozen berries (blueberries, strawberries)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 425°F (220°C) and place a cast-iron skillet inside to heat.
  2. In a mixing bowl, whisk together eggs, milk, flour, sugar, and melted butter until smooth.
  3. Carefully remove the hot skillet from the oven and add 2 tablespoons of butter to coat the bottom.
  4. Pour the batter into the skillet and quickly return it to the oven.
  5. Bake for about 20 minutes until puffed and golden brown; avoid opening the oven door during baking.
  6. Remove from the oven, top with berries while warm, dust with powdered sugar, and serve immediately with maple syrup.
