  • 1 cup sourdough starter
  • 3 cups unbleached all-purpose flour
  • 1/2 cup brown butter (melted)
  • 2 tsp ground cinnamon
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp salt

Instructions

  1. In a large bowl, mix the sourdough starter, flour, sugar, salt, eggs, and milk until smooth.
  2. In a saucepan over medium heat, melt the butter until browned and nutty. Allow to cool slightly before adding to the dough mixture.
  3. Knead the dough for about 10 minutes until elastic. Cover and let rise in a warm spot until doubled in size (1-2 hours).
  4. Roll out the dough into a rectangle (1/4 inch thick), spread softened butter on top, sprinkle with cinnamon sugar, and roll tightly into a log.
  5. Slice the log into 12 mini rolls and place in greased muffin tins. Bake at 350°F (175°C) for 15-20 minutes until golden brown.
