Ingredients

  • 6 large eggs
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 pre-made pie crusts
  • 1 cup assorted fillings (spinach, bell peppers, bacon, etc.)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a bowl, whisk together eggs and milk; season with salt and pepper.
  3. Stir in cheeses and chosen fillings until well combined.
  4. Roll out pie crusts to about 3 inches in diameter and place in muffin tin cups.
  5. Fill each crust with the egg mixture just below the top edge.
  6. Bake for 20-25 minutes until golden brown and set.
  7. Allow to cool slightly before serving on a platter.
