  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup blueberries (fresh or frozen)
  • 1 ½ cups sliced strawberries

Instructions

  1. Prepare the crust by mixing graham cracker crumbs with melted butter and pressing into the bottom of a springform pan.
  2. In a bowl, beat softened cream cheese with sugar and vanilla until smooth. Gradually add heavy whipping cream until fluffy peaks form.
  3. Spread half of the cheesecake mixture over the crust. Layer half of the strawberries and blueberries on top, then add more filling.
  4. Finish with remaining filling and top with remaining strawberries and blueberries.
  5. Cover and refrigerate for at least 4 hours or overnight until set.
