  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 cup fresh cilantro, chopped
  • 4 garlic cloves, minced
  • Juice of 2 limes
  • 1 green pepper, diced
  • 2 tsp smoked paprika
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • ½ cup sour cream or Greek yogurt
  • 1 jalapeño (optional)
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix minced garlic, lime juice, olive oil, smoked paprika, cilantro, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat with olive oil. Sear the marinated chicken for about 6-7 minutes on each side until golden brown.
  3. In a pot, bring chicken broth to a boil. Add rice and salt. Lower heat, cover tightly, and simmer for 15-20 minutes until liquid is absorbed.
  4. Blend cilantro, garlic, sour cream (or Greek yogurt), lime juice, jalapeño (if using), salt, and pepper until smooth.
