Description

Quinoa & White Bean Veggie Burgers are a deliciously hearty and healthy alternative to traditional burgers.   • 1 cup quinoa
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/4 cup fresh parsley or cilantro, chopped
  • 2 tbsp olive oil (for frying)
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water; bring to a boil. Lower heat and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  2. In a skillet over medium heat, warm olive oil. Sauté diced onion until soft (about 5 minutes). Add minced garlic, cumin, and paprika; cook for another minute.
  3. In a large bowl, mash white beans with a fork until mostly smooth. Mix in cooked quinoa, sautéed onion mixture, breadcrumbs, parsley or cilantro, salt, and pepper until well combined.
  4. Form mixture into patties about 3 inches wide and place on a parchment-lined baking sheet.
  5. Heat more olive oil in the skillet over medium-high heat. Cook each patty for about 4-5 minutes per side until golden brown.
