- 1 cup quinoa
- 1 can (15 oz) white beans, drained and rinsed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1 tsp cumin
- 1 tsp paprika
- 1/4 cup fresh parsley or cilantro, chopped
- 2 tbsp olive oil (for frying)
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water; bring to a boil. Lower heat and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
- In a skillet over medium heat, warm olive oil. Sauté diced onion until soft (about 5 minutes). Add minced garlic, cumin, and paprika; cook for another minute.
- In a large bowl, mash white beans with a fork until mostly smooth. Mix in cooked quinoa, sautéed onion mixture, breadcrumbs, parsley or cilantro, salt, and pepper until well combined.
- Form mixture into patties about 3 inches wide and place on a parchment-lined baking sheet.
- Heat more olive oil in the skillet over medium-high heat. Cook each patty for about 4-5 minutes per side until golden brown.
