  • 4 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine chopped rhubarb with granulated sugar and set aside to release juices.
  3. In another bowl, mix flour, oats, brown sugar, cinnamon, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
