  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh basil, chopped

Instructions

  1. Boil salted water in a large pot. Cook rigatoni until al dente (10-12 minutes). Drain and reserve some pasta water.
  2. In a skillet over medium heat, add olive oil and sliced sausage. Cook until browned (5-7 minutes).
  3. Stir in minced garlic and zucchini; sauté until zucchini softens (3-4 minutes).
  4. Add diced tomatoes; simmer until softened (5-7 minutes). Mix in cooked rigatoni and reserved pasta water to achieve desired consistency.
  5. Remove from heat; stir in Parmesan cheese and fresh basil. Serve hot with extra cheese and basil as garnish.
