- 2 lbs beef roast (eye of round or chuck roast)
- 12 slider buns
- 2 medium sweet onions, sliced
- 8 oz provolone or Swiss cheese, sliced
- 1 cup low-sodium beef broth
- 1 tsp garlic powder
- 1 tsp freshly ground black pepper
- 2 tbsp unsalted butter, melted
Instructions
- Preheat the oven to 325°F (160°C). Season the beef roast with garlic powder and pepper. Sear in a hot skillet for 3-4 minutes on each side until golden brown.
- In the same skillet, sauté sliced onions over medium heat for about 10 minutes until caramelized.
- Place the seared roast in a baking dish, pour beef broth around it, cover with foil, and bake for about 2 hours until fork-tender.
- After cooking, let the roast rest before slicing thinly against the grain. Return sautéed onions to medium heat with cheese until melted.
- Slice slider buns in half horizontally and layer with beef and onion-cheese mixture. Brush tops with melted butter and bake at 350°F (175°C) for 10-15 minutes until golden brown.
