Description

Ingredients

  • 2 lbs beef roast (eye of round or chuck roast)
  • 12 slider buns
  • 2 medium sweet onions, sliced
  • 8 oz provolone or Swiss cheese, sliced
  • 1 cup low-sodium beef broth
  • 1 tsp garlic powder
  • 1 tsp freshly ground black pepper
  • 2 tbsp unsalted butter, melted

Instructions

  1. Preheat the oven to 325°F (160°C). Season the beef roast with garlic powder and pepper. Sear in a hot skillet for 3-4 minutes on each side until golden brown.
  2. In the same skillet, sauté sliced onions over medium heat for about 10 minutes until caramelized.
  3. Place the seared roast in a baking dish, pour beef broth around it, cover with foil, and bake for about 2 hours until fork-tender.
  4. After cooking, let the roast rest before slicing thinly against the grain. Return sautéed onions to medium heat with cheese until melted.
  5. Slice slider buns in half horizontally and layer with beef and onion-cheese mixture. Brush tops with melted butter and bake at 350°F (175°C) for 10-15 minutes until golden brown.
