  • 2 (6 oz) salmon fillets
  • 1 sheet puff pastry (thawed)
  • 4 oz cream cheese (softened)
  • 2 tbsp fresh dill (chopped)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix cream cheese, dill, parsley, lemon juice, salt, and pepper until smooth.
  3. Pat salmon fillets dry and cut them to fit puff pastry squares.
  4. Roll out puff pastry on a floured surface; cut into squares large enough to encase the salmon.
  5. Place a dollop of filling on each square, followed by a salmon fillet.
  6. Fold over the pastry to seal and brush with egg wash.
  7. Bake on a parchment-lined baking sheet for 20-25 minutes or until golden brown.
