  • 8 oz penne pasta
  • 1 lb Italian sausage (sweet or spicy)
  • 1 cup bell peppers (mixed red, yellow, green), chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by chopping bell peppers and onion, and mincing garlic.
  2. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In a large skillet over medium heat, add olive oil and crumbled sausage. Cook until browned (6-8 minutes).
  4. Add chopped onions and bell peppers to the skillet. Sauté until softened (about 5 minutes).
  5. Stir in minced garlic and Italian seasoning; cook for another minute until fragrant.
  6. Combine drained pasta with sausage mixture and gradually add reserved pasta water until well-coated.
  7. Serve garnished with freshly grated Parmesan cheese.
