Ingredients

  • 1 lb large shrimp (fresh or frozen)
  • 2 ears corn on the cob, cut into 4 pieces each
  • 1 lb baby potatoes, halved
  • 8 oz Andouille sausage, sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp Old Bay seasoning
  • ¼ cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Place halved baby potatoes and corn pieces on the baking sheet.
  3. Scatter sliced Andouille sausage over the veggies, then drizzle with olive oil and sprinkle Old Bay seasoning evenly over everything.
  4. Toss all ingredients together until well-coated with oil and seasoning.
  5. Roast in the oven for about 20 minutes until potatoes are tender.
  6. Add shrimp to the pan, drizzle with lemon juice, and return to the oven for an additional 10 minutes or until shrimp turn pink.
  7. Garnish with chopped parsley before serving straight from the pan.
